Veggie Pita Pocket

Ingredients

  • Pita pocket (I used the Trader Joes whole wheat pockets but if you check out a local bakery or Italian market they might have some fresh)

  • 2 tablespoons olive oil

  • Cherry tomatoes

  • Onion (thinly sliced)

  • Mushrooms (chopped)

  • Green peppers (thinly sliced)

  • Cucumbers (chopped into halves)

  • Hummus (I made mine from scratch using Ottolenghi’s recipe)

MAKE

  • Heat your pita pockets in the oven (350°F for about 3-5 min)

  • Sauté onions, green peppers, and mushrooms over medium heat in a large skillet with 2 tablespoons olive oil

  • Slice cherry tomatoes into halves

  • Add humus to the pita pocket, top with sautéed veggies, and add cherry tomatoes!
