Gluten free gooey chocolate chunk brownies (DF)

Ingredients

  • Earth Balance Vegan Buttery Sticks (you need 2/3 cup melted)

  • Eggs (you need 2)

  • Organic Cane Sugar (you need 3/4 cup)

  • Honey (you need about 1/4 cup)

  • Vanilla Extract (you need a dash)

  • Organic All-Purpose Flour (you need 2/3 cups)

    • Use Bob’s Red Mills 1 to 1 Gluten Free Baking Flour to make these gluten free

  • Baking Soda (you need 1 tsp)

  • Baking powder (you need 1/2 tsp)

  • Organic unsweetened cocoa powder (you need 1 cup)

  • Sea salt (you need a pinch for the batter)

  • Non-dairy Dark Chocolate Chips, Chunks, or Morsels (you need about 1/2 bag or 3 oz)

BAKE

  • Preheat over to 350 F and grease a baking dish with oil (I use avocado oil spray)

  • Melt the butter (I use the microwave for this)

  • Get a small and large bowl

  • In small bowl 1:

    • Add 2 eggs and whisk them gently (do this quickly so you don’t over mix the eggs)

  • In large bowl:

    • Add 2/3 cup flour, 1 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, and a pinch of sea salt

    • Mix

  • Get out your mixer or another bowl

    • Add the butter and 3/4 cup cane sugar

    • Whisk together until a little creamy looking

    • Add vanilla and the 2 whisked eggs

    • Mix (not too long, just until ingredients are combined)

  • Add the dry ingredients to the wet ingredients

  • Slowly mix with a wooden spoon (so you don’t over mix)

  • Once combined, add 1/2 bag of chocolate chunks

  • Mix

  • Pour batter into baking dish and bake for 45 - 50 minutes
