Fresh Fruit Gluten Free French Toast Casserole

Ingredients

  • Gluten free bread (I used 1/2 a loaf; that’s about 5-6 slices)

  • Lemon (you need the juice of one large lemon)

  • Lemon rind (you need the rind of one lemon; that’s about 2 tablespoons)

  • Frozen berry mix (you need 1 cup)

  • Cinnamon (you need 2 teaspoons)

  • Nutmeg (you need 1 teaspoon)

  • Eggs (you need 3)

  • Vanilla (1 teaspoon)

  • Salt (you need a pinch)

  • Maple syrup (you need 1/4 cup)

  • Oat milk (you need 1.5 cups)

MAKE

  • Heat oven to 350°F

  • Chop bread into cubes and add to a 9x9 baking pan

  • Spread frozen fruit out over the bread (add more fruit if you want!)

  • In a medium bowl:

    • Add 3 eggs, 1.5 cups oat milk, 1/4 cup maple syrup, 2 tablespoons lemon rind, lemon juice, 2 teaspoons cinnamon, 1 teaspoon vanilla, 1 teaspoon nutmeg, and a pinch of salt

    • Mix together with a whisk

  • Pour mixture over the bread and fruit

  • Add to the over for about 35-45 minutes

  • Slice and drizzle with maple syrup and more fruit!
