Simple Chia Seed Pudding

 
 

Sometimes my body is calling out for a light and refreshing morning breakfast that will fill me up without leaving me overfilled. Chia seed pudding is a great way to switch up your breakfast routine whilst still providing your body with a nutritious and delicious morning meal. I recommend eating this topped with fruit and nuts!

INGREDIENTS

Chia Seeds (1.5 -2 cups)
Coconut milk (4 cups)
Cinnamon (1 TBS)
Nutmeg (1 tsp)
Vanilla (1 tsp)
Honey (1 tsp)
Pinch of sea salt

*makes about 4-6 servings

 

MAKE

Combine all ingredients into a large bowl; stir
Let sit for 10 minutes uncovered on the counter
Stir the mixture
It’s ready to eat but for better results, cover and store in the fridge over night

Optional: Heat strawberries with a little coconut sugar in a sauce pan, let cool, spoon on top of pudding
