Dairy Free Chewy Chocolate Chip Cookies

Ingredients

  • Earth Balance Vegan Buttery Sticks (you need 1 cup which translates to two half sticks if you buy Earth Balance and leave these out on the counter so they are super soft)

  • Organic Cane Sugar (you need 1 cup)

  • Organic All-Purpose Flour (you need 3 cups)

    • Use Bob’s Red Mills 1 to 1 Gluten Free Baking Flour to make these gluten free

  • Brown Sugar; I used dark but light works too, whatever you have (you need 1 cup)

  • 2 eggs (note: if you prefer no eggs you can substitute about a 1/2 cup of maple syrup)

  • Vanilla Extract (you need a dash)

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • Sea salt (you need a pinch)

  • 1 bag of non-dairy dark chocolate chips, chunks, or morsels

BAKE

  • Preheat over to 375 F and line baking tray with parchment paper or grease with vegan butter or coconut oil

  • Get two bowls (one medium, one large)

  • In large bowl

    • Mix 1 cup butter, 1 cup cane sugar, 1 cup brown sugar

    • Gently whisk in the 2 eggs and a dash of vanilla until mixture is fluffy (2 min)

  • In medium bowl

    • Mix 3 cups flour, 1 tsp baking soda, 1/2 tsp baking powder, pinch of salt

  • Slowly add the medium bowl ingredients to the large bowl

    • Use a spatula to mix together so you do not over whip the eggs

  • One mixed dump the bag of chocolate into the bowl and continue to fold

  • The mixture will be pretty oily, almost melted feeling but don’t worry!

  • Roll mixture into balls that are about 1.5 inches all the way around

    • This will look pretty big but they should not spread out too much in the oven so it will be fine. I put 6 on the pan at one time and baked about three trays full

  • Pop in the oven for 10 minutes

    • They will look a little under done (light in color) but take them out and transfer them to a baking sheet and let them cool and finish cooking themselves there
