Frozen Stuffed Dates

Frozen stuffed dates recipe

If you’re like me, then you also have a sweet tooth. Mine is nothing crazy but I do always crave a little something sweet after lunch or dinner. These frozen stuffed dates are the perfect balance of sweet, salty, cold, and chewy which makes them oh-so-satisfying. For a warmer twist on this dessert, put pitted dates in the microwave (not stuffed) for 30 seconds. Once warm, drizzle them with rosemary infused olive oil and sea salt.

INGREDIENTS

Organic, Pitted Medjool Dates (a bunch)
Nut Butter (you’ll need about 1 large tsp per date)
Dark Chocolate Morsels (½ cup or more)
Sea Salt (few pinches)

MAKE

Lay dates out on baking sheet; gently spread them open enough to fit nut butter inside.
Spoon nut butter into the center of dates.
Melt chocolate (microwave for about 2 min).
Dunk nut butter filled dates in chocolate (make sure to roll them around so you get all the chocolatey benefits).
Place dates back on baking sheet.
Generously sprinkle dates with sea salt flakes (and coconut flakes if you like).
Pop in the freezer for 30+ minutes.
Be sure to make extra for a quick & satisfying weekday treat!
