Falafel + Veggie Bowl

 
 

If you follow my newsletter, then surely you know that a good veggie bowl is the way to my heart. Veggie bowls serve up the perfect balance of protein and micronutrients to keep your body fuelled and ready to take on the day. I tried a bowl like this one when I visited a health food cafe in Spain and the flavors stuck with me. The saltiness of the sun dried tomatoes paired with the crunchy texture of the kale, the warm and comforting bits of falafel, and the fresh burst of tomatoes and smooth hummus; it’s just delicious.

INGREDIENTS

Kale (two handfuls, rinsed)
Bulgur (½ cup)
Cherry tomatoes (a few, rinsed and sliced)
Pre-made falafel balls (or make your own)
Sun-dried tomatoes in oil (you only need 3-4 pieces)
Hummus (1 TBS)
Lemon (½)

For the dressing

Lemon (½)
Tahini (½ cup)
Paprika (1 TBS)
Cold water (1/4 cup)
Salt flakes (1 tsp)

 

MAKE

Cook the bulgur by adding 1/2 cup bulgur to a pot with 3/4 cup water; bring to a boil; cover and let simmer for 4 min or until cooked; set aside to cool.
Chop the kale and add to a bowl.
Squeeze lemon juice over kale.
Massage the kale until it’s broken down quite a bit.
Make the dressing by adding lemon juice, tahini, paprika, cold water, and salt flakes to a small bowl; mix together; adjust for taste.
Slice sun-dried tomatoes into strips.
Add kale, bulgur, cherry tomatoes, falafel balls to a bowl and top with sun-dried tomatoes, a dollop of hummus, and some tahini dressing. Enjoy!
