Creamy Morning Oatmeal

 
 

Oatmeal became a staple in my pantry during my gut health journey. I found it to be the perfect way to kick start my system (if you know what I mean), while also filling me up and not bothering my tummy in the morning. Making oatmeal was also a great way for me to prioritize my morning breakfast routine, instead of rushing through it. I recommend using your oatmeal as a vehicle to get your daily serving of fruits into your diet!

INGREDIENTS

Gluten free oats (1 cup)
Coconut milk (2 cups)
Cinnamon (1 tsp)
Nutmeg (1 tsp)
Maple syrup (1 tsp)
Pinch of sea salt
Berries

Optional: flax, chia seeds, hemp seeds, currants, goji berries, nuts

 

MAKE

Add oats and coconut milk to a pot; heat on medium
Once boiled, add cinnamon, nutmeg, maple syrup, and salt; stir
reduce heat to simmer; continuously stir oats for 5 minutes or until oats have mostly absorbed the coconut milk and are cooked
Serve with an extra drizzle of maple syrup or honey, splash of coconut milk, and fresh berries!
